Roast Potatoes with Pine & Lemon

Ingredients

3 pounds of potatoes, halved (smaller ones can stay whole)

2 tablespoons olive oil

Juice of 1 lemon

3 cloves of garlic (crushed)

Salt and Pepper to season

2 tablespoons butter

Zest of 1 lemon

2 sprigs of fresh Nordmann Fir finely chopped

2 sprigs of Nordmann Fir for garnish

Method

Preheat oven to 225c

  1. Peel and parboil potatoes for 20mins

  2. Finely chop the Nordmann Fir

  3. In a small bowl, add the olive oil, butter, lemon juice, garlic and Nordmann Fir

  4. Season with salt and pepper

  5. When the potatoes are ready, drain them and add the pine butter and toss until coated

  6. Add the potatoes to the baking tray

  7. Place in the oven and bake for 40-45 minutes until golden and crisp, turning half way through

  8. Serve immediately and garnish with lemon zest and the sprigs of pine needles
